Ultra decadent macaroni and cheese pizza is a great splurge meal or a fun appetizer if cut into small squares.

I try to cook healthy meals for my family, things like quinoa, hearty salads, and lots of great chicken recipes.

But I believe in all things in moderation. This leaves room for food like Mac and Cheese Pizza. With bacon. An over-the-top, ultra-decadent splurge food. Get out your stretchy pants, you’re going to need them for this recipe.

Not only is this PIZZA — but it’s topped with carbs, cheese, and bacon. All good things, obviously.

In lieu of the sauce that is traditionally found on pizza, I opt for a super creamy stove-top macaroni and cheese. This keeps the pizza from getting too dry. I use one of my favorite cheeses, sharp white cheddar, to give lots of amazing flavor to the pizza. I top it with crispy bacon (Because, well, just because. Bacon.) and sliced green onions to freshen the whole thing up.

Mac and cheese pizza might just be the most kid-pleasing dinner of all time! Who needs sauce and mozzarella when you can top your pizza with creamy macaroni and cheese?

Ingredients

For Macaroni and Cheese

  • 8 ounces uncooked elbow macaroni (about 2 cups)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • ½ teaspoon Dijon mustard (optional, for flavor)
  • ¼ teaspoon kosher salt
  • ¼ teaspoon coarse ground black pepper

For Pizza

  • 1 ball pizza dough, thawed if frozen
  • 1 tablespoon olive oil
  • 1 cup shredded sharp cheddar cheese
  • Optional toppings: cooked crumbled bacon (3 to 4 strips), sliced green onions, toasted bread crumbs, chopped parsley

Instructions

To make macaroni and cheese:

  • Cook the pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside.

  • In the same pot, melt the butter over medium heat. Add the flour and whisk continuously for 1 to 2 minutes, until smooth and bubbly, to make a roux.

  • Gradually stir in the milk, whisking constantly to avoid lumps. Cook the mixture until it thickens, about 5 to 7 minutes. Reduce the heat to low, and slowly add the cheddar cheese. Stir until the cheese is melted and the sauce is smooth. Stir in the Dijon mustard (if using), salt and pepper.

  • Add the cooked pasta to the cheese sauce, tossing until the pasta is well coated.

To make pizza:

  • Preheat oven to 400°F. Grease a 10 x 14 inch rimmed baking sheet with 1 tablespoon olive oil. Spread dough out in pan as evenly as possible. Bake crust for 10 minutes.

  • Remove crust from oven. Top pre-baked crust evenly with 6 cups cooked macaroni and cheese. Top with 1 cup shredded cheese and cooked crumbled bacon, if desired..

  • Bake for 12 minutes or until crust is golden brown and cheese is melted. Garnish with sliced green onions or chopped parsley, if desired. Serve hot.

Notes

  • For the smoothest sauce, shred your own cheese instead of buying bagged shredded cheese.
  • You can substitute commercially prepared mac and cheese, if desired. Choose a creamy homestyle mac and cheese. You’ll need 6 cups.

Verdict: What’s not to love?
Husband’s take: He definitely ate WAY more of this than I did. As it should be.
Changes I would make next time: None are necessary. Definitely easy to adapt though — throw some pepperoni on instead of bacon for a traditional pizza flavor.
Difficulty: Slightly time consuming but easy!

    Okay, so there’s a Chuck E Cheese type place nearby called John’s Incredible Pizza and they have mac and cheese pizza that is so bad it’s good, you know? But I’ve never actually made it at home — and now with your recipe (which I can tell will be 3284768274 times better) I MUST. Drooling!!

    Thats awesome! What a wonderful idea! While I am in the intense phase of my half marathon training cycle, I can enjoy nice big servings of foods like this! One of the perks of being an elite athlete is that I burn off the calories….but I work so hard so I earn it :) Pinning right now!
